Cat Posted February 28, 2007 Share Posted February 28, 2007 As Will says, boudin noir can be fried, but they're a little more delicate than our black puddings as they don't have the same thick inedible skins. They can be fried whole, if done gently, but for frying in slices I find it helps to slice them quite thickly, start them off at a fairly high heat to seal the outsides, and then reduce the heat to finish them.
