Short of rice flour, semolina flour does just as well.  But then, I wouldn't know where to find semolina flour here in France (new girl on the block)![8-)]

Fécule  = starch

I use fécule de pomme de terre or fécule de maïs (cornflour) to thicken béchamel or "white" soups and to make lightweight cakes (gateau de Savoie,génoise).
