hoverfrog Posted December 13, 2007 Share Posted December 13, 2007 you can get potato flour here too - an important ingredient in the recipe for "gateau de savoi" that my french penfriend's grandmother gave me over 30 years ago!It's called "fécule de pomme de terre". No idea why - I always thought flour = farine :)[/quote]Fécule = starchI use fécule de pomme de terre or fécule de maïs (cornflour) to thicken béchamel or "white" soups and to make lightweight cakes (gateau de Savoie,génoise). hoverfrog Posted December 14, 2007 Share Posted December 14, 2007 ah, that would be it!I hesitated over the 'e' on the end of "savoie"...!I've heard of using a proportion of cornflour for lighter cakes and pastries, but have only the one recipe that calls for potato flour.Perhaps either of those would work instead of rice flour?
