tizzylizzy
Hi. I saw a lovely recipe on the goggle box the other night for walnut and maple syrup scones. [:P] The ingedients included buttermilk. Can we buy it in France and what is it called? I wondered if liquid crème fraîche would be a good substitute? Many thanks. Clair
http://www.completefrance.com/cs/forums/936124/ShowPost.aspxhttp://www.completefrance.com/cs/forums/742803/ShowPost.aspxIt's called babeurre or lait ribot but is difficult to find fresh outside Normandy and Brittany (milk producing areas).I have used lait fermenté, as found in the fresh milk/cream section of the supermarket. They also usually have a tall "brick" with Arabic writing on it (white, blue and yellow, marked Elben) which is a very good substitute. I use it a lot when attempting various scone recipes!EDIT: I don't think crème fraiche would be a good substitute. Yoghurt+milk would be better... Nell
One tablespoon of lemon juice or white vinegar per one cup of milk. This was what my gran used when she ran out of buttermilk making soda bread in Ireland
Suze01
Lemon juice in milk is also what they suggest on cookery progammes as a substitute for buttermilk.
