I see that they are quite cheap now and I'm proposing to buy one as a gift for a French friend. I've extolled the virtues for long enough. Théière Posted February 26, 2014 Share Posted February 26, 2014 It's just a method of slowly cooking food it's not a different set of ingredients, reducing the water content is about the only difference between that and any other method as they produce less steam so less is boiled off. Théière Posted February 26, 2014 Share Posted February 26, 2014 It should certainly help with the tougher cuts although I did wonder if a pressure cooker was better for those as they are quite common in france.
