Suandpete Posted January 5, 2007 Share Posted January 5, 2007 Yes it freezes really well - surprisingly even the soft cheeses like camembert. With the harder ones, the longer you freeze them the crumblier they get when you defrost but they are fine for a few weeks - after a couple of months they are probably best used to cook with.
