For each route, day and flight, Ryanair will have a curve showing the expected booking occupancy against the number of days before the flight.  If actual bookings are above the line, the price goes up.  If below the price falls.  This means booking at the last minute can be very cheap if the flight is well below the norm, but very expansive if there are only a few seats left.  Ditto booking early, you can get very good deals especially as BLSLIV says midweek, but also early morning and late at night very often, but if a large extended family group booked 10 minutes before you, then the prices will look quite high.

School holidays and public holidays will generally attract a premium as we all want to take holidays or short breaks.

The problem is that you are not trying to beat the Ryanair psychology, you are trying to beat the psychology of the great air ticket buying masses

The following site will check the prices of flights over a large number of days including Ryanair, giving an indication where to find the cheapest. Currently the system cannot include the taxes, but that does not matter as you will still be able to identify the cheapest. Also, it will tell you how long ago the price was trawled and then link you to the airline site to check the latest situation.
