Preserving pears?

Leclerc sell a clear white spirit, tastes a bit like vodka, for preserving fruit.

Tried is yesterday with some vine peaches and it seems to have worked fine so will try with pears at the weekend, as they are both soft fruits, same principles should apply.

Gently poached, seems to have done the trick and then top up the jars with warmed spirit/

... and here's one that seems easy      

Fruits à l'Eau de Vie

3 kilos fruit, 1 long cinnamon stick, 1 kilo sugar, eau de vie for fruit (or alcool blanc à 40°)

Wash the fruit making sure none are damaged,  fill the jar with the fruit and slide in the cinnamon stick against the glass, add the sugar and fill up with the eau de vie.  Leave to macerate three weeks before tasting.
