Fromage blanc or frais

Technically, both are fromages frais (freshly-made cheese).

Fromage blanc is lumpier and wetter than fromage frais and is usually kept in its whey and drained from its faisselle (perforated mould) just before serving.

When drained for a longer time, it is presented as fromage frais.

I don't know which, if any, is served in hotels at breakfast. My guess would be fromage blanc, but I could be wrong...

Fromage blanc and fromage frais  are both very easy to make at home and you can also make a very good fromage frais by draining home-made yoghurt.
