The best book I've read on the subject of running gites and B&Bs in France - and I read half a dozen before we started doing B&B - was only published last year.It's RUNNING GITES AND B&Bs IN FRANCE by Jo Taylor.Having actually done the biz for a few years now, this is the one I would have most valued if we had been starting up now.Written in plain language, it gives all the pros and cons, pitfalls andpratfalls, and contains contributions from a range of owners so youdon't get just one person's view.You can even download a bit of it as a taster.
