Gammon

Can somebody help please ?

We’ll be (unusually) here in France for Christmas.  We quite like gammon - usually poached in all sorts of thing, and then briefly baked off in a hot even and served with parsley sauce.

What should I be looking for in the supermarket?  Can’t find the right name in any of my books.

It translates a jambon fumé if that is any help. Whether you can get the big bits we are used to remains to be seen. Surely your friendly local butcher will know?

If you're going to cook it yourself you should ask for a jambon frais or demi sel. Chances are, if you ask your butcher for a 'jambon gammon' he'll probably know what you mean.

Thank you very much for your help.  Yes, I was indeed looking for a ‘lump’ weighing about 2kgs max.

I have never seen proper gamon steak in France.

It that the one you soak before cooking? Served with swede ?
