I would suggest you go to the notaires' own web site, at http://www.notaires.fr/notaires/notaires.nsf/V_TALL_PUB/GREN-5UFLJB and select the third option down; you should then receive a booklet (for which there is a small fee) giving current information about PACS which you can read (with the aid of a dictionary or French-speaking friend if necessary) and then show to the notaire. The notaire should be up to speed on this matter - it's part of the job - but some do feign ignorance of such matters, for many reasons (it's the same part of the French character that gave us the 'gallic shrug').

It's important to get current information, there were some significant changes last year.

The notaires' site has some pages in English - the only one about PACS concerns taxation (and I'm not sure how up to date it is) http://www.notaires.fr/notaires/notaires.nsf/V_TC_PUB/CIVIL-SOLIDARITY-PACT.

Altenatively, it might be easiest to just ask another notaire. This is exactly the sort of thing about which they are supposed to be able to freely advise.
