Cooking Sous-Vide

Has anyone here tried cooking at home with this technique?  It's in the news in New York right now, because the health inspectors have decided there aren't enough "saftey" measures in place.

But the articles about it have intrigued me.  Not enough, probably, to buy a vacuum-sealer at this point, but I'm really curious about anyone's home experiences with the technique.
