bamboo

Contrary to most opinions on bamboo I like the stuff and have plenty of it, 27 varieties in different shape and form and colour. Mostly its contained in areas, apart from odd clumps.  I also like to eat bamboo shoots, which I buy in tins from the supermarket. Now my question is: Can I eat the bamboo shoots in my own garden? can I eat all the  varieties? How do I cut and prepare the shoots?
