Harley
Does anyone know a really simple way to preserve pears in syrup - never done it before but have lots of pears which I don't want to waste.[:D] Thanks
Cassis
Oddly, we are going to do the same thing. There are loads of recipes online. Here are some that I've been looking at for Jude to pick one she fancies:http://www.texasmonthly.com/community/phorum/read.php?f=1&i=2528&t=2528

Tony F Dordogne
Leclerc sell a clear white spirit, tastes a bit like vodka, for preserving fruit.Tried is yesterday with some vine peaches and it seems to have worked fine so will try with pears at the weekend, as they are both soft fruits, same principles should apply.Gently poached, seems to have done the trick and then top up the jars with warmed spirit/
Christine Animal
... and here's one that seems easy Fruits à l'Eau de Vie3 kilos fruit, 1 long cinnamon stick, 1 kilo sugar, eau de vie for fruit (or alcool blanc à 40°)Wash the fruit making sure none are damaged, fill the jar with the fruit and slide in the cinnamon stick against the glass, add the sugar and fill up with the eau de vie. Leave to macerate three weeks before tasting.
Cassis
Do you have to shake it, Christine, or do you just leave it like that? What does it taste like and does it improve with age?
Christine Animal
I've no idea Cassis, I just saw the recipe, did you click on the link? The sugar must dissolve, but I suppose you could shake it about a bit [:P]I don't yet know what it tastes like, must also depend what fruit you use and it must improve with age, like us [:)]
