I made extra mix and have put a small cake in, baking as I type, I put half the mix in the baking tin and then smothered lemon curd over it and then covered the lemon curd with the rest of the mix. I did this about a week ago when I made a coconut cake, smothering raspberry jam half way and it was delicious. idun Posted August 16, 2012 Author Share Posted August 16, 2012 My cake with lemon curd was not as I hoped. The lemon curd sank, so I may as well have put the lemon curd on the bottom to start with.
