Crater cakes

Out of the oven and cooling. I made extra mix and have put a small cake in, baking as I type, I put half the mix in the baking tin and then smothered lemon curd over it and then covered the lemon curd with the rest of the mix. I did this about a week ago when I made a coconut cake, smothering raspberry jam half way and it was delicious. So let's hope that this works out today.[:D]

My cake with lemon curd was not as I hoped. The lemon curd sank, so I may as well have put the lemon curd on the bottom to start with. The coconut cake with what turned out as being laced with raspberry jam was pretty and tasty.
