It's Italian meatloaf according to a quick Yahoo! search.Recipe for Polpettone: 1 lb. ground beef1 oz. lard, chopped1-2 oz. milk2 eggs2 tbs. grated Parmigiano1/2 cup breadcrumbs1 lemonolive oil2 tbs. butter1 onionsaltpepperMix the ground beef, lard, eggs, Parmigiano, 2 tbs. breadcrumbs, lemonjuice, salt and pepper. Add a few spoonfuls of milk and mix well. Themixture should be fairly solid but moist. Shape the meat into a loafand coat with breadcrumbs. Heat the oil in a large pan and brown themeat evenly on all sides.Meltthe butter in another pan and brown the chopped onion. Place the loafover the onions and cook in a pre-heated oven at 475ºF for ½ hour. Keepthe bottom of the pan moist enough to prevent the onions from burning.This dish is excellent hot or cold, sliced.Note:Polpettone can be prepared with other kinds of meat, leftoversor a mixture of meats. Mashed potatoes, crustless white bread, orchopped greens can be added to the mixture. However cooked, the mixtureshould be browned in hot oil first so that is does not break whilecooking. The same meat mixture can be used to make meatballs, orpatties, which must first be browned, cooked halfway, then stewed withtomato sauce. The resulting sauce can be used for pasta.
