0BRIAN WOODHEADI,m here in franceddMMyyyy0Falseen-USI,m here in franceTrue Posted November 27, 2004 Share Posted November 27, 2004 What to have with foie gras this xmas,and more important how to cook it, raw is not for me,a bit waxy,could be used like butter on toast.How do they keep the birds mouth open so long to make the liver so big,dont the EU want to ban it like the californians courters of arnie and an ex beatle veggie are in the process of doing,will the french ever ban it.This week we have had 3 invites to attend 3 different caves that we get are wine from, all advertising "muscat du noel" and guess what they all recommend?foie gras,even on the market the local wine seller who was giving small glasses of muscat away and even he recommended foie gras with the wine.The promo this week in most supermarkets is different sorts of the stuff,fresh and tinned,the fresh comes as a whole liver,never bought the fresh,good job would not of cooked it Link to comment Share on other sites More sharing options...

Make sure you get her to prepare the snails, there is a complex process that first involves starving them for a few days - and then putting them in some salt water to get them literally to get rid of all their snot . Geranium Posted November 29, 2004 Share Posted November 29, 2004 If you are a novice to foie gras cooking it my be best to buy one ready cooked and enjoy it sliced with a wine jelly (Sauternes is the most popular). if you want to cook it though you can fry it very quickly as mentioned and serve hot with fried apple slices or maybe peaches, or you can cook it whole. You put it in a loaf tin with a little seasoning and maybe some brandy and cook it in a Bain Marie.
