Open Ended Return

If I am going to France but dont know when I am coming back who would you recommend I book with? I am assuming maximum stay is going to be 90 days as that is when insurance, breakdown cover etc kicks in. Is it only the ferries that do open ended returns or does Eurotunnel do them as well?

Would have to restrict myself to Calais/Boulogne/Dieppe as Brittany would be too far the other side.
