It really is a case of getting there and finding something then.One note of caution: many Spanish commercial hotels don't open their dining room until 8.30 or even 9.00 in the evening so this can be a bit late for us more northern Europeans if you're looking for an early start the next day. Be careful not to take a hotel next door to a "Club" which will be easily identifiable with a champagne glass complete with "lady" sat on the rim lit with very garrish neon lighting.
