another cooking question

poivrez ..... Does this mean pepper as you would use..... salt the fish.... pepper the meat.

Its just one word in a sentance on its own.

beat the eggs flour and cream until a even consistency. Poivrez . Use little salt because of the anchovy.

Are they using it as a verb to pepper ?
