It is absolutely delicious, I cooked it for the first time yesterday and we polished off the rest for lunch today.Marinade ingredients (amercian cup size = 8oz):1 head of garlic, peeled and crushedquarter cup of dried Oreganohalf cup red wine vinegarhalf cup olive oil1 cup pitted pruneshalf cup pitted green oliveshalf cup of capers with a little bit of juice6 bay leavessalt & pepper to taste about 5 chicken leg portions, skinned and cut into drum sticks/thighs1 cup white winetwo thirds cup brown sugarMethod: Mix all the marinade ingredients and pour over the chicken pieces, thoroughly coating them. Cover and leave to marinate overnight in the fridge.Arrange the chicken in a single layer in a casserole dish, pour over the marinade. Pour over the white wine then sprinkle the sugar all over.Bake for about an hour at 180c/350F/gas mark 4.Equally good with rice or boiled or roasted potatoes.Susie Link to comment Share on other sites More sharing options...
