'Agen Chicken' recipe

For Jill & any one else interested. I should firstly credit this to Chris & Carole who served this to us and gave me the recipe. It is absolutely delicious, I cooked it for the first time yesterday and we polished off the rest for lunch today.

Marinade ingredients (amercian cup size = 8oz):
1 head of garlic, peeled and crushed
quarter cup of dried Oregano
half cup red wine vinegar
half cup olive oil
1 cup pitted prunes
half cup pitted green olives
half cup of capers with a little bit of juice
6 bay leaves
salt & pepper to taste

about 5 chicken leg portions, skinned and cut into drum sticks/thighs

1 cup white wine
two thirds cup brown sugar

Method:
Mix all the marinade ingredients and pour over the chicken pieces, thoroughly coating them. Cover and leave to marinate overnight in the fridge.

Arrange the chicken in a single layer in a casserole dish, pour over the marinade. Pour over the white wine then sprinkle the sugar all over.

Bake for about an hour at 180c/350F/gas mark 4.

Equally good with rice or boiled or roasted potatoes.
