Elderflowers

Our hedges around here are full of Elderberries. They are purply black and very juicy looking. I had a relative, sadly no longer with us, who made the most delicious and alcoholic wine ever with elderflowers. However, this is France so perhaps an alternative use for the berries would be more appropriate. Coals to Newcastle etc.

Are they treated like any soft fruit? Can you freeze or bottle them? What do you turn them into? Crumbles? Toppings? Jam/jelly?

(I have followed and noted the cordial making thread.)
