Plum wine?

Lisa,

I've tried searching to find your posting about plum ketchup but without any luck. If you have a recipe for it, could you re-post it please?

I have a recipe for plum sauce but it uses damsons which I don't have - I have kilos of largish dark blue plums and am about to be overwhelmed with mirabelles. If anyone has any ideas for those apart from chutney, jam and bottling, I'd live to hear them!

Yes, I have some fab recipes for wine, just made some yesterday.  What sort of plums have you?  I'll post up the most suitable.

Also you will need wine yeast, yeast nutrient and pectic enzyme, not easy to get in France.

They're just about over for this year now, but would still be useful for next year. 

They are all miniature plums.  We have yellow plums that are about one inch and a quarter in diameter and quite sweet.  Then we get red ones that are a bit smaller, say one inch, and pretty tart, and finally we have ones that are the siza of cherries and also quite tart.
