Tourangelle
Sometimes I'd love to be served vegetables just plain. MIL isparticular prone to overcooking of veg which are lovely to start offwith. She cooks carrots and peas and broadbeans together forages, puts sugar in and then serves them without draining thewater. The soggy mess on the plate was probably quite nice about30 minutes earlier, minus the sugar.

Tourangelle
great emoticon [:P] I was just think about the French and their veg, and I remember when Ifirst moved here, how surprised I was that they don't always peel theirpotatoes. I guess when I go out people don't often serve mepotatoes but the other day I was at a friend's house and we were havinga raclette evening and my French friends were all saying to our hosthow nice it was that she'd gone to the trouble of peeling the potatoes[*-)][:S][8-)]
Mistral
Tourangelle, I like unpeeled potatoes (I never used to peel mine- partly laziness) My husband's grandmother always cooks potaoes in their skins and then everybody spends ten minutes scalding their fingers trying to peel them on their plates, while I've already started eating. They do seem to taste better cooked that way and they are less likely to be cooked to a mush.I agree with the comment that french people probably get their vegetables/fruit from other things than the main course, there always seems to be some sort of crudité starter and fruit for pudding. One of the villages near us is having a festival des soupes next week. maybe I'll find out what to do with all the vegetables then.

Mistral
why on earth would they peel them??
Because you don't eat potato skins (shock! horror !etc) Not peeling them is for cooking, not for eating!I'm not saying that no french person eats unpeeled potaoes but my in-laws were horrified to see me doing it (they still are but they're used to it now)
Teamedup
I don't like the skins on certain varieties of potatoes. So it will depend as to whether I eat them or not. The other skin I eat is fish skin, whereas most french people we know always leave it.
