vervialle Posted May 11, 2006 Share Posted May 11, 2006 Its Barbq time, well for those of you that do not cringe at fresh fois gras this is for you.I buy a portion of fresh fois gras it is usually about 20 euros fo about 350gms, I slice it thinly and freeze it in layers, I know this is outlawed but it works and you cannot have fresh at hand unless you are loaded so slices in the freezer will have to do. I make homemade burgers with fresh mincemeat, onnion , alittle garlic and fresh herbs any that you have , mix with an egg and shape them, cook them on the barbq in a fish rack so they stay whole, about five minutes before they are cooked put a slice of your fresh fois gras on top and cook for a further five minutes serve on a nice round of toasted bagguette topped with gruyere cheese.With a wonderful crisp salad and a lovely cold glass of sancerre (devine) Link to comment Share on other sites More sharing options...
