margie
Does anyone have a simple recipe for veggie burgers using ingredients easily found in France. I have searched on the internet but most recipes seem to use ingredients that I can't find here. I have a freezer full of assorted vegetables and would like to find a way to use them up without too much hassle. thanking you in anticipation. Beryl
Can of kidney beans and can of chick peas drained and any other beans you like the taste of( tinned are softer than ones cooked yourself)1 medium onion finely choppedGreen chili if you like spicyCrushed garlicsalt and pepperCoriander choppedMash all the ingredients together, add a good squirt of tomato sauce then add some fine porridge oats or semolina just to bind.Shape and chill for an hour, dust lightly in flour and place on greased baking trayBake in over for 20 mins or so, turning once. They hold their shape better in the oven that trying to cook in frying pan.Quantities are a bit hit and miss , sorry. Owens88
Do remember that burgers need 'binding'. There are vege burgers sold in the UK that are so full of mushed veg that they are useless. As a vegetarian I would sooner have veg soup , or veg croquets or rissoles than squidgy non-burgers.
Patf
Try adding ground nuts or brown bread crumbs if the veg. mixture is too wet. I sometimes make a nut roast with a mixture of onions tomatoes bread crumbs eggs herbs and any other vegetables to hand. Pat.
