sueyh
We have enough cheese left over from Christmas and new year to sink the titanic. Can it be frozen - mostly french cheese, including chevre.Thank youSuey
Suandpete
Yes it freezes really well - surprisingly even the soft cheeses like camembert. With the harder ones, the longer you freeze them the crumblier they get when you defrost but they are fine for a few weeks - after a couple of months they are probably best used to cook with. I only discovered this about a year ago - after wasting quite a lot each time we had friends round for a meal!
hastobe
We asked our French neighbours this a few weeks ago and they said exactly the same - we were very suprised and didn't realise that cheeses like camembert and brie would freeze!Kathie
Kevinmc
By and large, if it contains water, it will freeze. The higher the water content, the quicker it should be frozen.
united
We freeze cheese generally without a problem. Leave the cheese until it has matured to your liking then freeze, when thawed out it does not seem to continue to mature.
Paul Brown
I often freeze cheese, and I agree that it doesn't seem to mature any further after I defrost it.
