Hoddy
I was given some of these by a neighbour yesterday and they were delicious. They were coated in an ordinary, fairly thin, batter and then deep fried. You don't eat the stalks and there's just enough nectar in the flowers to give a little sweetness.I was going to try some myself today, but the rain is spoiling the flowers so I may have to wait till next year.Has anyone else tried these ?Hoddy
Gemini_man
i have to admit that the thought of climbing up an acia tree with those horrendous thorns rather puts me off [:D] even though they do sound deliciousinternet, it's a wonderful tool - just found this: http://18thccuisine.blogspot.com/2006/07/beignets-de-fleurs-dacacia-baie-de.html
daisymay
A friend of mine makes fritters from wisteria and says they are delicious. Elder flower fritters will be next on the seasonal calendar.
Weedon
All of these sound nice...and don't forget to use those lovely courgette flowers to make great finger licking fritters. All that dipping sauce dripping off your chin is fantastic.
TWINKLE
We have them every year Hoddy - they're delicious. Try adding a little splurge of Nestlé condensed milk (the one in the tube) to you you batter.

Dog
Which acacia are you using? The local bio farmer showed me the false acacias and said his grandmother used the flowers in a cake - did'nt give me the recipe though.
