Clair Posted January 2, 2009 Share Posted January 2, 2009 With the Epiphanie approaching (6th January), you're likely to find some "packets duo" (packs of 2 pastry sheets) on special offer to make your own galette des rois.It's really easy to make at home: Video and instructions (in French)Ingredients: * 2 rolls of puff pastry For the almond cream: * 3 eggs * 125 g of powdered almonds * 125 g sugar * 125 g of soft butter * 2 drops of bitter almond extract * 2 tablespoons of orange flower water or an alcohol of your choice To decorate: * 1 egg yolk * 1 tablespoon milk * A ceramic bean (or other token) Link to comment Share on other sites More sharing options...

Preparation time 4h, of which 3h 15 de repos!They illustrate the "ceramic beans" which look like tiny toys which you hide inside. Like the 6pences Grandma used to put in birthday scones. We are lucky enough to be fairly close to the best Patisserie in Carcassonne, La Traditione, and they do the most wonderful Galette du Rois so no need for the cooking of them! Yum, yum, yum!!
