Clair Posted September 1, 2009 Share Posted September 1, 2009 Technically, both are fromages frais (freshly-made cheese).Fromage blanc is lumpier and wetter than fromage frais and is usually kept in its whey and drained from its faisselle (perforated mould) just before serving.When drained for a longer time, it is presented as fromage frais.Fromage blancFromage fraisI don't know which, if any, is served in hotels at breakfast. My guess would be fromage blanc, but I could be wrong...Fromage blanc and fromage frais are both very easy to make at home and you can also make a very good fromage frais by draining home-made yoghurt.
