Frank Posted November 15, 2009 Share Posted November 15, 2009 Hi everyone, I am planning on making a salmon gateau as a starter for christmas dinner (early I know, but you know what they say about the 5 p's!!!) and I am looking for recommendations for the French product/version of a full fat soft cheese and a quality cream that can be used for whipping, has anyone any ideas please?? The recipe has creme fraiche for the dressing, but asks for whipping cream for the cheese filling. I don't usually shop at the supermarkets you mention but in the chiller section near the butter there are now numerous creams suitable for whipping unlike a number of years ago when the choice was limited. Own brand ones always seem to have herbs and/or garlic added. mint Posted November 15, 2009 Share Posted November 15, 2009 Mascarpone is pretty good for cream cheese and there is a cream called "crème professionelle" which you can get at largish supermarkets.
