confused of chalus
Today my son surprised me by sending a Bradley digital smoker as a birthday present. It's a very extravagant gift (big birthday) and having never even considered buying one I am a bit flummoxed. Has anyone got one? I dont want it to be consigned to the garage and only brought out once in a blue moon - but we cant afford to buy endless salmon, nor would we want it too often. Any ideas?kathy

Théière
Wow that looks a bit flash compared with my basic Brinkman. Ham's are good as are chickens, tasty although as you say too often and you'll get bored.
confused of chalus
Thanks for replies. Can I smoke cheese (there's a cold smoke adapter) and if yes, what sort would you start with? Can you mix say fish, bacon and sausages in the same batch or do you have to just do one thing at a time?kathy
confused of chalus
Just looked properly at the Bradley link, thanks PeterG- and found lots of recipes (some are just plain wierd, seem to be aimed at the USA hunting brigade - Moose heart????) including hints on cheese smoking. Still need to know whether I can mix things up in the smoker though. And any tips/hints.
idun
Amazingly that looks rather like our home made smoker. We get wonderful food from ours and we tend to make up lots and it freezes beautifully.
Loiseau
We used to have a very basic smoker - a sort of tin box that stood over a meths burner. We did mackerel and trout in it very successfully.Angela

Moose heart, nothing wrong with that, tastes a bit like Racoons bum.
idun
We usually do a mix in our smoker with it's three shelves. Saussison a cuire, fish maybe, a 'meaty' fish usually and chickens or pork loin joints rather than chops. We do a lot as it is something that takes time and attention, so we may as well have extra and freeze it. Personally I prefer this to a barbeque. That is a meal that really gets me down. Everyone says that they do it well and so few do, I reckon making it under the same heading as driving and sex.
Charly
Not convinced that all 4 subjects mentioned in your second paragraph require the same approach. Have a drink, relax, cheer up !![8-)]

idun
No, I'm not a nag. Cannot see the point really, alienating those you live with. If I was so darned unhappy that I had to nag, I'd leave.[:)]
