Braising Steak in French please

I agree nomoss that bifteck ( beef steak ) is only too often only good for braising.

You ask for boeuf a braiser, but then there are so many types, including gelatinous ones, (beurk) not at all to my taste. I used to buy gite-gite, or noix de gite.
