Pads
I either freeze mine but can then only use them for cooking , or dry them and store in olive oil which I can then use for cold dishes and salads
Pierre ZFP
Important point to note is that it isn't a good idea to store fresh chillis in oil unless they are dried first. I didn't know about this until last year when my son had a bumper crop and looked into making chili oil. Apparently it can promote the growth of botullism (sp). In any case it's easy to thread them on a cord using a large needle and hang them in a dry place in the sun. Very attactive they look too.
Russethouse
You can also thread them onto a wooden stick and put them in a gas oven with just the pilot light on, or an electric oven very low....
sueyh
Sounds a good idea RH because at the moment we are lacking the sunshine in the PdC!!Suey

Jo
We have pickled ours, don't know how they will keep as it's the first year we've done them. Might not find out as my son is snacking on them[blink] He says they've given the vinegar a lovely flavour[:)]
ViVienne
I usually freeze mine too, but I have made Nigella's chilli jam in the past (it was really hot!!)
