can anyone tell me what documentation is required to open a hotel.

And what is a a diploma "hotellerie"

All that kind of information is on http://www.inforeg.ccip.fr/ .

For example, the hotel information is at http://www.inforeg.ccip.fr/fiches/pdf/hotel.pdf ; it seems pretty basic documentation that they're looking for - SACEM, drinks license, TV license (or is this now defunct?), etc. Pretty dated too in a number of ways eg it goes on for a fair bit about deposits which are rarely taken by hotels these days.

There is a separate checklist for the stars rating which isn't on that site but can be picked up from the hotel association (whose name escapes me at the moment).

I ran across the Diplome Hotellerie some time ago. I think it's in effect a GNVQ for hotel work but don't quote me on that!
