Have a look at http://www.sfr.fr/assistance/reseau-sfr-france/ for SFR and for Orange go to http://www.orange.fr then “Boutiques Orange” and click on “Mobile” then “la couverture” on the left side of the screen.These will only give you a guide, especially if you are in a rural location. Local knowledge is usually best – what network do your friends in the area use? Have you used a UK network mobile where you are in France? What network did it roam onto most – that would be the one to buy.You say you have a mobile but not a SIM – is the phone “unlocked” so that you can use any network SIM?
