French Speaking Trips?

I was at the pub with a friend (a chap I met on a French Course in Edinburgh) last night and we came up with a cunning plan.  We would both like to learn French more intensely and would like to make a trip to France where we can do a bit of voluntary work (maybe for three of four days initially - to see if we like it!) and learn a bit more of the language as we go.  We can both 'get by' in French but would really like to have a proper go at it.  Sounds like a bit of fun and something that could be mutually beneficial to the proprieter of a small french business (of any kind whatsoever!) and two thrity somethings who would like like to speak french during the day and pass the time in the evening over a few glasses of wine.  Does anyone have any ideas to help this ridiculous plan get off the ground?  Any help would be greatly appreciated.
