It's a three part document, give one copy to the buyer, keep one for yourself and send the third copy to your prefecture. It's the equivalent of the DVLA change of keeper notification. Draw a diagonal line across the front of the carte grise and write on it "vendu le (date and time)", fill in the buyer's name and address on the bottom voucher, then hand it over to him.
