Converting a van to something else.

I have the chance to buy a UK-reg van at a good price. Registration here should be no problem. (famous last words - I said that about the bloody Landrover!) but I would like to convert it to a mobile snack/pizza van. What would need done regarding the paperwork? I would intent to get a standard French Carte Gris first, then do the transformation.

I was at the dreal today and the chap wasnt too helpfull to be honest. I believe the genre has to be changed from Fourgon to Magasin, but no idea if or what proof may be required once the work is done.
