Getting accredited for working in France?

I have seen threads about people wishing to get their UK qualifications recognised in France but nothing that fits this question.

I have a dutch friend who for employer in a job that he has had no previous experience of in Holland or French qualifications in. There only evidence that he can do this catering job is at workplace. He wants to try and get another job in same field but it seems that his experience alone is not enough.

As he has been doing this for a number of years is there anyway he can get accreditation and a qualification, BEP or CAP etc. The only other way he has found that he can get even a basic qualification is to become an apprentice on day release and he is a bit long in the tooth for that.
