As we have dontmovetofrance several times above, i would suggest looking at www.moving-to-france.com as well. Don't think they are exactly opposed but the name thing is funny.

In the Languedoc section a good site is www.southerntimes.net which talks about life in the languedoc, has news about events of interest to anglophones and has a really good section on local markets.

Also of course http://www.sunfrance.com/index.php3?langue=en which is the languedoc region's official tourist site. for a few years it was very hard to navigate, but now is not so bad and has a lot of useful and interesting  information about the region.
