I cannot find an Open Day for Castelnaudary.

Is this what you mean?

The official Foreign Legion site shows the Castelnaudary town event (for the 4th Regiment, which is the one based in the town) as

Mon 30 April and Tues 1 May 2012.

Here is the timetable LINK

[EDIT:  Ooo, I took so long to write this, that Clair has nipped in first!]

Bizarrely, Castelnaudary town's own website has:

Samedi 28 et dimanche 29 avril 2012

Quartier Capitaine Danjou

Commémoration des combats de Camérone

organisée par le 4ème RE

but they must have got it wrong...   You would think the Legion itself would be correct - especially as 30 April was the significant day in the battle of Camerone.

A newspaper description of 2011 says that 10,000 visitors attend each year!

There is no mention anywhere about photography or dress-code.

We had the 1st regiment from Laudun-L'Ardoise round local cafes and restaurants on Wednesday, selling tickets for their kermesse tombola. Open days on 30th April and 1st May, with a parade on 30th April. It's the first time I've seen this lot; we usually have the Nimes regiment here for various events.

Don't know what I'll do with a quad if I win the tombola!

The thing I like about the Foreign Legion is they never turn their back on one of their own... Any ex soldier of theirs who falls on hard times can report in and ask for assistance.... It may be support to get over an addiction homelessness whatever...The Legion has a place to take them in and get them back on their feet .
