NormanH
This could put the cat among the pigeons..or ducks. The method of producing the majorityof foie gras sold in France doesn't respect European legislation....http://www.lemonde.fr/societe/article/2011/12/14/le-foie-gras-vendu-en-france-serait-il-illegal_1618456_3224.html
idun
I don't like meat paté but I do love a good foie gras d'oie with some toast and a little glass of sauternes, if I can. And if it the production is illegal in France then surely it is in Hungary too, where I think much comes from......... then where will it come from? Maybe I'll give it a miss in the future. pachapapa
Goose fatty liver is less than 5% and less intensive, probably methods are more traditional and less illegal. But difficult to find out, easier to crack a mobile phones than the périgord mafia.
My friends used to get the foie and do it themselves, from the producteur, so I would hope it was the oie that they thought it was. Even if it wasn't it was delicious.
