Great....how very British....

Rub coarse salt and cracked pepper into the skin of the duck bits, lay flat on an oven dish (skin up) and fire for 30 to 40mn at oven 190c/200c. Serve with gently fried (in the fat of the duck if you can) diced potatoes and full roasted tomatoes.

My partner just did a lovely dish with some duck spare parts [:)]

We were given a cannelle and we cut the breasts off and did magret with them, he cut the rest up, marinated it overnight in some vegetable stock to which he added soy sauce and some chilli bean paste.

He then cooked the duck bits in the stock in a pan at a gentle simmer for 15 minutes or so, drained the duck and stuck it in a hot oven to crisp up for about 10 minutes, drained it and allowed it to cool, then used the duck meat with part cooked cabbage and carrots with some ginger and a splash of oyster sauce, to make some spring rolls using bought filo ish pastry from the local Carrefour. 10 Minutes in the oven and served with a sweet chilli dipping sauce, they did not last long [:D]
