Is that correct please and does it work please[/quote] I've made ice-cream this way and it worked fine.  It is a little labour intensive and easy to forget to stir it.  I used a metal bowl and a metal spoon to scrape the frozen part off the inside surface of the bowl. This scraping and stirring is what makes the 'fluffiness'.   I can't see any reason why this method wouldn't work for sorbet. I was given an ice-cream maker as a gift, the type with a bowl to freeze and  an electric stirrer in the lid. The ice-cream made in this is lighter (fluffier) because it's stirred all the time.  I don't use the whole machine very often but the frozen bowl gets used for serving boules of (shop bought!) ice-cream or ice cubes for drinks.     Liquide lampe a petrole. This is for sale at the moment in Bricomarche and Intermarche,  in plain 1l white plastic bottles (on the shelf near turps, white spirit, linseed oil etc in the same style of bottle). Hope that helps.

  7. I know quite a few people who work around Toulouse and who use English as the first language at work. They tend to work in IT or aerospace and are employed for specific skills/qualifications rather than, for example, on the reception desk. Also, there used to be a big Hewlett Packard presence in Grenoble; engineers from all over Europe were trained there (in English).  I'm not sure if it still exists as I was there 15+ years ago. Grenoble is not too far from Lyon, another big city... It might be worth looking at Lyon, Bordeaux and Marseille. I would also check out Strasbourg. I hope that helps a bit and encourages others to add their experience. Good luck with your search. I'm sure you'll find plenty of leads with this kind of proactive research.
